This is our flagship product. Giant White Corn Kernels are also known as Mote (Mo-te) in South America and is a 100% Natural and gluten free product with up to 30 times more mineral content than conventional corn! Mote is also free of 49 pesticides as measured by the National Measurement Institute.
Mote is found in the prestine valleys of Cochabamba in Bolivia and various parts of Peru, Ecuador, Colombia, Guatamala and Mexico.
These corn kernals, when cooked in water, are a light and healthy way to add to your salads, caseroles, soups, omeletes. When it is roasted it makes a great snack! Our Mote is 100% natural and has passed all tests for 49 pesticides by the National Measurement Institute of Australia. It is also gluten free and is free of artificial colours and flavours.
We have 3 varieties, white; yellow and black corn. You can order either the flour or whole kernel.
From Mote flour you can bake bread and cookies. Use the flour to make Colombian Arepas (South American Corn Cakes), or Peruvian Tamales. Our Mote has such a distinct taste that you will love forever. Really bring out the taste of South America. From Mote kernels cooked in water – in the same way as you do with beans – can be used as a substitute instead of rice in risoles and many other well known dishes.

GIANT CORN SALAD (MOTE)
Description: Giant Corn Salad (Mote Salad) is a new salad that uses a unique corn kernel from South America. This corn is 5 times greater than conventional sweet corn and has up to 20 times more minerals such as Calcium, Selenium and Magnesium.
Ingredients:
140 g Corn (Mote)
2 tomatoes, sliced
1 onion, diced
1 capsicum, sliced
¼ lettuce, sliced
salt to taste
1 table spoon oil
200 g cheese slices (Feta or Goats cheese)
Rinse well 140 grams dried white corn
Soak in cold water over night
Drain the corn and cover with 4 cups of water and bring to the boil
Simmer over low heat for 1 or 2 hours or until corn is tender, drain.
Use as a vegetarian dish by mixing cut tomatoes with chopped onions, capsicum, salt and oil. Place on top of cooked mote with a slice of cheese.
Once cooked, Mote can be served as a side dish with many dishes such as salads, sausages, fish, casseroles, soups, or as a desert such as toasted popcorn.
